Granola cupcake with cream cheese frosting
Servings: Around 12 cupcakes
INGREDIENTS:
Cupcake
- 1 ½ cups of All Purpose Flour
- 1 tsp of Baking Powder
- 1 ½ cups of Granola
- 1/2 of cashew nuts (optional)
- 1/2 tsp of Salt
- 1 tsp of cinnamon powder
- ½ cup of Milk (any fresh milk)
- 1 Egg
- ½ cup of Oil (Vegetable or coconut oil)
- 1 tsp Vanilla Extract
Cream cheese frosting
**If you will not put a filling then you may divide the ingredients by 2.- 1 pack (8 OZ or 226g) cream cheese
- 4 cups (600g) powdered sugar (icing/confectioner)
- 1/2 cup of unsalted butter (room temperature)
- 1 tbs vanilla extract
INSTRUCTIONS:
Cupcake
1. Preheat your oven, set to 180 degrees Celsius.2. In a large bowl, whisk together the wet ingredients such as oil, milk, vanilla extract then add the sugar. mix until well combined.
3. In another large mixing bowl, mix the flour together with the granola, baking powder, cinnamon and salt.
4. Combine step 2 & 3 by slowly pouring the wet ingredients into the dry mixture until fully combined. Do not over mix.
5. Using a big spoon, scoop the batter into the cupcake liners.
6. [optional] fill the batter with cream cheese frosting.
7.Bake for 10 to 15 minutes depending on the size of your cupcake (Check by inserting a toothpick in to the center of the cupcake, when it comes out clean meaning it's done)
Cream cheese frosting
1. In a large mixing bowl, mix cream cheese and butter using an electric stand or hand mixer for about 3 minutes or until smooth and the color is whiter then the butter.2. Slowly add the icing/confectioner sugar and vanilla extract for another 5 minutes.
3. refrigerate the frosting then decorate the cupcakes once completely cool.
